These enchiladas are so delicious and simple! They don’t take long to make at all, and I cook this meal for us about once a month. Note that we are from Texas and do not like authentic Mexican food – so these are TEXMEX enchiladas! That means no vegetables and lots of cheese – yummy!
Preheat oven to 375.
Brown ground beef and drain the grease.
Add taco seasoning and cook according to directions.
While that cooks, grease a 9×13 pan with cooking spray. Pour half of the enchilada sauce into the bottom of the dish.
Once the meat is done, begin adding spoonfuls into the flour tortillas, one at a time. Tightly roll each tortilla up and place in the dish. Continue this until all tortillas are in the dish (they will be tightly packed together).
Pour the rest of the enchilada sauce over the tortillas and generously sprinkle the cheese on top.
Cover with foil and bake for 20 minutes.
Serve with refried beans and Mexican rice.
