Smore Cookie Bars

Of all the people in my life that love to cook and bake, I got this recipe from..... my college accounting professor. Weird, right?! She was GREAT! This sweet soul baked hundreds of these bars for her students before every exam. She was an amazing teacher who really cared about her students!

What's even better is that she shared the recipe with us and they are so simple to make. These really 'wow' my friends every time I make them! Smore cookie bars are the perfect addition to any summer BBQ, pool party, or beach day 🌴🍫

- Graham crackers
- Mini marshmallows
- Nestle Tollhouse chocolate chip cookie dough
- Hershey's milk chocolate bar(s) 

I left out quantities because it is easy to make exactly the amount you want. I usually make 1-2 dozen depending on crowd size.


Preheat the oven to 350 degrees. Break apart the graham crackers into individual squares and spread evenly along a large baking sheet (no cooking spray necessary). Scoop a dollop of cookie dough onto each cracker. Bake for 5-7 minutes. The cookies will not be completely cooked yet, but that's okay. They will return to the oven shortly.

During these few minutes while the cookies bake, I like to prepare the chocolate and marshmallows. Each bar will get 1 Hershey's chocolate square and 3 mini marshmallows. So I usually break apart the chocolate and separate the marshmallows into groups of 3. I set them beside the oven so the next step can be completed quickly.

Remove the pan after baking for a few minutes, and immediately add 1 Hershey's square and 3 mini marshmallows on top of each cookie. Once each bar has all of its toppings, return the pan to the oven and bake for an additional 3-5 minutes or until the marshmallows brown. Keep an eye on these as they bake as cooking time will vary by oven. You don't want to burn the marshmallows!


Once the marshmallows are baked to your liking, remove the pan from oven and let cool completely. Serve and listen to everyone say "Mmmmmm!"

These are dangerous, as in I could eat 2000 calories worth within a few minutes because they are so good and easy to eat! And how easy is this recipe?! It is a people-pleaser dessert for sure!
