- Shrimp*, peeled and deveined
- Flour tortillas
- Mango pico de gallo**
- Chipotle Mayo
Sauté shrimp in a pan over medium heat. Sprinkle with your favorite seasoning (we prefer Cajun). Cook on each side for 3-5 minutes. While the shrimp cook, begin to prepare the tacos. Warm the tortillas in the microwave for 10 seconds. Plate the tortillas and top with a few spoonfuls of coleslaw. Once the shrimp are done cooking, place a few in each taco on top of the coleslaw. Add a few spoonfuls of mango pico de gallo on top of the shrimp and drizzle with chipotle mayo. Serve!
*For this recipe, you can get fresh or frozen shrimp in whatever size you prefer.
** Mango pico de gallo is regular pico (diced tomatoes, onion, cilantro, jalapeño) with diced mango added. It adds a sweet, refreshing kick!
