Sausage Gnocchi Soup

It’s a chilly 50° outside, your favorite fall candle is burning, and your evening plans include cozying up with your family, some blankets, and a good movie. All you’re missing is the meal! Well, my friends, this is it. This soup is the perfect comforting meal on a chilly day! My husband often says this is his favorite meal that I cook (and he is picky, so I know this is a winner)!


  • 1 lb mild Italian sausage
  • 1/2 cup white onion, diced
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 package sausage gnocchi
  • 3 cups fresh spinach 
  • 1 cup heavy cream
  • salt and pepper, to taste
  • crushed red pepper flakes (optional, for spice)


Brown the sausage in a large stockpot over medium heat until no pink remains. Drain the grease. Toss in the onion & garlic and cook for 2 minutes, until the garlic is fragrant. Add chicken broth and season with salt and pepper to taste. Add a few sprinkles of crushed red pepper flakes (optional) according to your desired spice level. Bring to a boil. Break apart gnocchi and add to the pot. Cook until gnocchi begin to float. Add spinach and stir until wilted. Stir in heavy cream. Scoop into bowls and serve!
