Homemade Pickles

Posted by Ashley Robustelli on

You know that moment when you taste something and can tell that it was freshly made? The moment when you know you are tasting fresh ingredients without any preservatives? You can just tell because there is a huge difference! Fresh is so much better (and better for you, too!). That is what these pickles taste like: fresh, flavorful, and delicious! There is patience involved in the process, but it is so worth it!

  • 1 cucumber
  • 1/8 cup salt
  • 2 cloves garlic, sliced
  • 1 cup water
  • 1/3 cup white vinegar
  • 1/2 Tbsp whole black peppercorn
  • 1 tsp red pepper flakes*
  • 1 Tbsp fresh dill

*to control heat level, reduce/increase red pepper flakes

Thinly slice cucumber and place in bowl. Sprinkle salt over the cucumbers and add the garlic. Mix to combine. Cover with plastic wrap and refrigerate for 4 hours. This process helps pull the moisture from the cucumbers and preps them for the brine.

Remove the cucumbers from the fridge and rinse thoroughly. When you think you have rinsed them well, rinse them some more. Only a quick rinse will result in very salty pickles. Once clean, place them in a mason jar or clean bowl.

Next, make the brine. Combine the remaining ingredients in a small saucepan and bring to a boil on the stovetop. Once boiling, pour into the jar over the cucumbers. Allow the jar to cool, then refrigerate again for 2 hours.

Now they are ready to serve and enjoy!
