This was my husband and I’s first time to ever cook fish since we’ve gotten married (4 years ago)! To be honest, we did not expect this meal to turn out that well since this was our first attempt. But it was actually GREAT! We argued over who would get to eat the last fillet of mahi mahi. Not to mention, it was also very simple and quick!


  • 3+ Mahi Mahi fillets (We used frozen fillets for this recipe and it tasted great)
  • 1 tsp ground ginger
  • 1 garlic clove, minced
  • 3 Tbsp honey
  • 3 Tbsp balsamic vinegar
  • 3 Tbsp soy sauce
  • 2 tsp olive oil
  • salt
  • pepper


Start by making the marinade. In a shallow baking dish, mix together the honey, soy sauce, balsamic vinegar, olive oil, ginger, and garlic.

Season the fillets with salt and pepper, then add to the dish. Make sure they are covered in the marinade. Cover the dish in plastic wrap and refrigerate for 20 minutes.

Once the fish fillets have marinated, heat 1 Tbsp of olive oil in a cast iron skillet over medium heat. Add the fillets and reserve the marinade. Cook on 4-6 minutes per slide, flipping once.

Set the fish aside and keep warm. Add the remaining marinade to the skillet and reduce until it thickens. Once you are happy with the consistency, you can plate the fish and cover in the glaze.

Serve over rice and with salad. Enjoy!

For the salad: Toss together spring mix greens, feta cheese, craisins, sunflower seeds, and croutons. Top with coleslaw dressing!
