Easy Potato Salad

Have you ever had potato salad that is too mustard-y? Or maybe too heavy on the mayo side of things? Well, this recipe is NOT that. It's the opposite: the perfect blend of flavors combined to create a delicious salad that is not overpowering on the palette. It's our favorite!
We recently moved to a new state and were invited to a summer BBQ, and this is the dish that we chose to bring. Nothing says 'be my friend' like a good potato salad (LOL)!
Ingredients:
- 1 lb cubed white potatoes (your choice to peel or not)
- 1/2 cup mayonnaise
- 1-2 Tbsp mustard, to taste
- 1/4 cup celery, diced
- 1/4 cup dill pickles, diced
- 1/4 cup white onion, diced
- 2 Tbsp pimento, minced
- salt and pepper, to taste
Recipe:
Boil diced potatoes and mash to desired consistency. I don't like them to be completely smooth, so I leave some chunks throughout. Add all other ingredients to potatoes and mix. Chill in fridge for 2-4 hours prior to serving.
Seriously, how easy is that? I am a fan of no-fuss recipes, and this one fits the bill! Enjoy!
