If you are a lover of texmex, then hopefully you are familiar with CHUY’S restaurant! Some of the best texmex (and margaritas!) in my opinion. One item that they are known for is their creamy jalapeño ranch dip. It’s great with chips, on burritos or tacos, and also delicious to dip flautas in! The possibilities are endless with this one.
- 3/4 cup pickled jalapeños, diced
- 1/2 cup cilantro, chopped and packed**
- 1/2-1 cup pickled jalapeño juice
- 3/4 cup mayonnaise*
- 3/4 cup sour cream*
- 1 packet dry ranch seasoning (1 oz)
- 1/4 tsp garlic salt
- 1/2 cup buttermilk
* If you prefer less sour cream, you can use 1 cup mayonnaise and 1/2 cup sour cream.
** If you have cilantro-haters in your home (like my husband!) - don’t worry! The cilantro flavor is not strong in this dip, but is crucial getting the flavor right.
In a medium bowl, combine mayonnaise, sour cream, ranch seasoning, and garlic salt. Mix well and set aside.
Purée diced jalapeños, packed cilantro, and jalapeño juice (anywhere from 1/2 cup to 1 cup according to preference) in a blender or food processor. The more juice you add, the spicier the dip will be.
Once blended, add this mixture to the mayonnaise combo in the bowl. Stir well to combine. Finally, add in buttermilk. Chill in fridge until ready to eat. Serve with warm tortilla chips or your favorite texmex meal!
*This recipe produces enough for a party. Consider cutting the recipe in half or even 1/3 for a smaller amount.
